Cysteine is an important source of dietary sulphur and many of its important roles in the body involve the thiol (sulphur) group attached to each molecule of the amino acid. Sulphur is essential in the diet and obtained principally from the intake of proteins rich in cysteine and methionine. The other sulphur containing amino acids, taurine and cystine are synthesised from cysteine.
Cysteine contributes to the structure of proteins in the form of cystine, which is two cysteine molecules bonded together by a disulphide bond. Cystine is an important component of keratin, a structural protein of hair, skin and nails.
Cysteine’s most important role in the body is as a component of glutathione and it is cysteine’s thiol group that give glutathione it’s powerful properties as a detoxifyer and antioxidant.
