Baking with coconut flour: Coconut flour is very dry and absorbent, so it requires a much higher liquid ratio than most flours. This means it can’t be substituted for wheat or grain-based flours at a 1:1 ratio. Some general tips to keep in mind when creating or converting recipes:

 

– Add an extra egg for every ounce (28g) of coconut flour you use
– 1 cup coconut flour needs about 4-5 eggs
– For recipes with liquids (e.g. water, honey, syrup), add double the amount
– Beat the ingredients together really well

 

Coconut flour tends to behave differently from recipe to recipe and can mean it could take a few experiments before getting the right ratios! The best thing to do is to use recipes specifically designed for coconut flour. Eating healthy doesn’t mean you have to abandon your favourite foods if you have allergies to wheat or are gluten-intolerant!
